Chef Guiseppe Giuseppe Schimmenti explains the importance of food heritage: “What we can’t grow here, we buy locally. I chose our suppliers individually, picking from small local businesses and farms to ensure all the ingredients are local, fresh and authentic. For example, we use raw wild honey from the Sicilian black bee, pork from the Nebrodi piglet, milk from the renowned Girgentana goat, Villalba lentils, as well as ancient Sicilian grains such as Perciasacchi, which we use for our fresh homemade pasta. Fresh ricotta and pecorino come from a local farmer with a dairy five minutes away. You can even see the sheep grazing on the hills while you are sitting in our restaurant. A real Sicilian farm-to-plate dining experience.”
