There’s at least one restaurant in the Turks and Caicos Island of Providenciales where your St. Paddy’s day fare is as authentic as if you’re in Ireland itself. Paul Quinn, the Chef at The Vix Bar and Grill, learned everything he knows from cooking up real Irish ingredients in his native Dublin.
On St. Patrick’s Day, Quinn will smile if you ask if there’s a wee bit of Irish you can request off the menu. Quinn will whip up bacon and cabbage, whiskey cured river salmon, Guinness pie, and warm bread & butter pudding for dessert. Remember to wash it all down with a cold bottle of Guinness.
